Cast Iron Care for Professional Kitchens
UpdatedA well-seasoned cast iron pan is one of the most rewarding kitchen investments you can make. It heats evenly, sears beautifully, and — with the right care — lasts for generations. In this guide, we share the simple habits that keep cast iron at its best.
1. Seasoning: The Foundation
Seasoning is a layer of polymerised oil that gives cast iron its natural non-stick surface and protects it from rust. A good seasoning builds up over time with use:
- After cleaning, dry the pan thoroughly, then rub a thin layer of neutral oil (vegetable, grapeseed, or flaxseed) over the entire surface — inside and out.
- Wipe away any excess oil with a paper towel; the surface should look dry, not greasy.
- Heat the pan upside down in a 200°C oven for one hour, then let it cool inside. Repeat occasionally to strengthen the layer.
2. Cleaning: Simpler Than You Think
Forget harsh soaps and steel wool — modern cast iron is more forgiving than legend suggests:
- While warm: rinse with hot water and scrub with a stiff brush or a non-abrasive pad. A little salt works wonders as a mild abrasive for stuck-on food.
- Stubborn residue: simmer a little water in the pan for a few minutes to loosen it, then scrape gently with a wooden or silicone spatula.
- Drying is non-negotiable: dry over low heat on the stove, then apply a thin coat of oil before storing.
3. Cooking Habits That Protect
A few small choices keep the seasoning healthy:
- Preheat gradually — cast iron handles temperature changes slowly, so give it time.
- Avoid cooking highly acidic foods (tomatoes, vinegar) for long periods in a freshly seasoned pan.
- Use wooden, silicone, or nylon utensils to protect the surface.
4. What to Avoid
- Dishwashers — they strip seasoning and cause rust. Hand-wash only.
- Soaking — prolonged water exposure invites rust.
- High heat on empty pans — always add oil or food before heating beyond medium.
5. When Rust Appears
Rust is not the end. Scrub the affected area with fine steel wool, rinse, dry completely, and re-season. Within a day your pan is back in service — and often better for the reset.
